The name, how and why


"The real Black & White Panettone" was created to celebrate the memory of a particularly happy moment of my life, the pleasure for the projects that I'm realising and the opportunity to pay homage to "An Old Lady".

For the first time, two types of chocolate, white and dark, are intertwined into the cake, at the same time remaining distinct in each slice and creating a particular play of colours, the zebra stripes. The crust is garnished with fine almonds mixed with sugar and egg white to amalgamate properly with the cocoa.

Thirty-six hours of natural leavening, five mixtures and special, carefully selected raw materials, in addition to our "MOTHER YEAST", create a harmony of scents and wonderful sensations.
There is no strange alchemy. No additives and no preservatives or "magic powders" (improvers); only flour, butter, eggs, sugar, white chocolate, dark chocolate, cocoa, yeast, honey, salt and vanilla.

This RECIPE is our guarantee for a handcrafted quality product and it is the only one we know.

I let my daughters Chiara, Elisa and Giulia eat the products made with our "recipes" because I want them to grow up eating good, genuine food. I always recommend our specialties to lovers of good food with the hope of creating pleasure, enthusiasm and satisfaction while they enjoy our products.
